About the Event

Join the brilliant Rosie Brandreth (GBBO, series 10) live to make her delicious Vegan Afternoon Tea. A selection miniatures fit for a fancy afternoon tea, and all completely vegan (and all tested with gluten free flour). Deliciously spiced flaky pastry ‘sausage’ rolls, miniature Victoria sponge cakes with chantilly cream and little decadent mint chocolate mousses with chocolate shards. This is the perfect class for building your skills in vegan baking, whether you're vegan yourself, or curious on baking something a little different

The class starts at 5pm UK on Saturday 25th September 2021 and all you need is access to Zoom via a computer, an iPad or a phone and you'll be connected! We’ll start off the class with an introductory welcome and some background from Rosie's time on TV, before we ask you to put on your aprons & bake along as you watch Rosie demonstrate all the skills required to make these little treats. Our class will take around 1h 45 minutes as we bake our masterpieces, before you can tuck into the fruits of your labour all whilst hearing fantastic memories and stories from Rosie.

Tickets are priced at £35 for individuals and £50 for groups of two or more that will join from the same household. Places are non-refundable and cannot be cancelled or altered after purchase.

All classes are subject to a minimum number of six attendees signing up. If the minimum number is not met, we will inform those who have purchased a place no later than 48 hours before the class, and will arrange a full refund. All guests will be emailed a link to the class following their booking.

Equipment:

· Mixing bowls

· Whisk x 2 (ideally a stand mixer or electric hand whisk)

· Rolling pin

· Rectangular baking tin

· Flat baking tray

· Mini cupcake tray

· Baking paper (ideally textured)

· Food processor (to make breadcrumbs if not buying pre made)

· Sharp knife

· Saucepans x 2

· Measuring spoons

· Piping bags

· Round cutter

· Small jars/pots (to put the mousses in)

Ingredients:

For the pastry:

· 100g vegan ‘butter’ or ‘baking block’ (chilled and cubed)

· 125g plain flour

· Pinch of salt

· 40ml cold water

· Oat milk to glaze

For the ‘sausage’ roll filling:

· 150g bread crumbs (blitz cheap bread in a food processor or crumble it very finely, any stale bread will do)

· 140ml plant cream (or coconut cream, but this will change the flavour slightly)

· 1 tbsp nutritional yeast

· 1 small onion, either blitzed super fine in a food processor, or grated

· 1 tsp harissa paste

· Salt and pepper to season

For the chocolate mousse:

· 250g dark chocolate

· 120g aquafaba

· 2 tbsp caster sugar

· Good pinch of salt

· 200g double plant cream

· ¼ tsp peppermint extract (or orange extract if preferred)

· To decorate – gold food spray and fresh mint leaves (optional)

For the cakes:

· 200ml oat milk

· 3 tbsp lemon juice

· 200g margarine

· 200g caster sugar

· 200g self-raising flour

· 1tp baking powder

· ½ tsp vanilla extract

For the cake fillings:

· 50ml plant cream

· 25g icing sugar

· Drop vanilla extract

· Raspberry jam
