Lottie's Margarita Cake & Lime Chocolate Cookie Cups

Join the brilliant Lottie Bedlow (Great British Bake Off Contestant from series 11) live from her kitchen as she teaches you how to make her fabulous Margarita Cake & Lime Chocolate Cookie Cups.

Something for the grown-ups and the kids in this class! You'll learn how to bake Lottie's Margarita cake, filled with zesty limes, creamy white chocolate and all the delicious ingredients for a Margarita, as well as chewy Cookie Dough cups, packed with more white chocolate and filled with a lime chocolate ganache and topped with a pillowy Italian Meringue. Deliciously moreish and perfect for a sunny summer's day.

Bake With A Legend Online Classes are an interactive experience, where we limit group sizes to around 25 to ensure an intimate online setting. Not only do you have your celebrity baker teaching you, but you also have one of our brilliant Bake With A Legend hosts who will ensure the smooth running of your experience ensuring everyone is enjoying themselves.

If you need any help at any point during the class, you’ll be encouraged to raise your hand and your baker will be virtually joining you in your own kitchen in no time to assist you!

You’ll bake along in tandem with Lottie, learning many tips and tricks a long the way as you perfect all the skills required to make her delicious cake and cookie cups. Lottie will also be on hand to answer your questions, be those about baking or her experiences of being on television.

Tickets are priced at £35 for individuals and £50 for groups of two or more that will join from the same screen. Please note we can accept requests to move classes with two or more weeks notice prior to the class – any requests to do so, will incur a £5 administrative charge.

Once booked in, all guests will be emailed a full recipe and the zoom link required to join us for the class. Just in case you don’t spot it please check junk mail!

Equipment:

Mixing bowls 

Stand mixer or electric and mixer  

Spatula

Zester Measuring jug  

12-hole muffin tin

Saucepan & small bowl 

Small canister (e.g. spice jar)  

Piping bag

Microwave-safe bowl/jug 

Skewer or chopstick  

Baking paper

30 x 20cm (12 x 8in) traybake tin

Ingredients:

For the cookie cups:

280g plain flour 

½ tsp bicarbonate soda

1 tsp salt 

225g unsalted butter, room temp

100g caster sugar 

200g soft light brown sugar

2 large eggs 

Vanilla extract

265g white chocolate chips

For the ganache:

250g chocolate of choice, chopped  

200ml double cream

Zest of 3 limes 

Squeeze of lime juice

For the cake:

300g softened butter 

300g golden caster sugar

Zest of 3 limes 

5 eggs

300g self-raising flour (or plain flour with 4 tsp baking powder)

150g white chocolate  

70g Margarita cocktail*

For the Italian Meringue:

3 egg whites 

170g caster sugar

4 tbsp water

For the cake decoration:

100g white chocolate 

Margarita cocktail*

Lime slices

*Make up a margarita cocktail however you normally drink it. Tequila, Triple Sec & Lime Juice are common and you could add some Agave syrup for the drizzle, if you like it sweeter.
