About the Event

Join the brilliant Karen Wright (GBBO Star, series 9) live from Wakefield, UK as she teaches you to bake a showstopping Greek centrepeice alongside some mezze classics. This eye-catching pie is filled with feta cheese and spinach, a popular filling all over Greece. The side meze dishes are typical of any Greek Taverna, Tzatziki, Gigantes and Skordalia.

Equipment

Mixing Bowl x 2, 

knife, 

rolling pin, 

cling film, 

pizza wheel/knife, 

pastry brush, 

fork, 

parchment paper, 

ruler or tape measure, 

large flat baking sheet x 2, 

medium pan with lid, 

sieve and clean tea towel, 

large spoon, (cake lifter/palette knife/fish slice something to lift move the cooked pastry) cooling rack. 

Kitchen paper.

Pie: Pastry

250g strong bread flour, (plus extra for dusting).

250g butter broken into chunks (room temperature but not soft).

1 Tsp salt.

1 tsp lemon juice.

150ml chilled water.

Filling:

2 Tbs olive oil.

8 spring onions (scallions) trimmed and chopped.

200g spinach clean and dry.

Zest and juice 1 lemon.

1 Tbs chia seeds soaked in 1 tbs water.

1 Tbs oregano.

1 Tbs runny honey (plus extra for glazing).

2 tortilla wraps.

Salt and pepper.

1 beaten egg (for brushing on).

1 Tbs sesame seeds.

1 tsp sumac.

Skordalia:

400g potato, peeled and cut into chunks.

6 Tbs extra virgin olive oil.

2 Tbs white wine vinegar.

1 tsp garlic puree.

Salt and pepper.

Hot water to loosen.

Gigantes:

2 Tbs olive oil.

1 onion peeled and sliced.

1 tin chopped tomatoes.

1 tin butter beans (drained and rinsed).

1 tsp garlic.

1 tsp oregano.

Pinch of cinnamon.

Salt and pepper.

Sliced spring onion and fresh mint to garnish.

Tzatziki:

200ml Greek yogurt.

4 inches of cucumber.

Sprigs fresh mint.

Extra virgin olive oil.

Salt and pepper.

We’ll start off the class with an introductory welcome and some background from Karen's time on TV, before we ask you to put on your aprons and bake along as you watch Karen demonstrate all the skills required to make these delicious treats.

Our class will take around 2 hours as we bake our little masterpieces, before you can tuck into the fruits of your labour all whilst hearing fantastic memories and stories from Karen. Tickets are priced at £35 for individuals and £50 for groups of two or more that will join from the same household.Places are non-refundable and cannot be cancelled or altered after purchase. 

All classes are subject to a minimum number of six attendees signing up. If the minimum number is not met, we will inform those who have purchased a place no later than 48 hours before the class, and will arrange a full refund.

Upon booking, all guests will be emailed a link to the class with a full breakdown of ingredients and equipment as well as the method one week before their class. Please do check junk email just in case you don't spot it arrive!
