About the Event

Join the brilliant Ian Cumming (GBBO, series 6) live from Cambridge who will teach you to create his lemon and meringue creation, the Citrus Slice.Ian's recipe is a rich buttery layer of shortbread, baked with with a citron filling, before being topped with perfectly piped meringue. If you're looking to practice your piping, then this is a great chance to focus on your skills.We’ll start off the class with an introductory welcome and some background from Ian's time on TV, before we ask you to put on your aprons and bake along as you watch Ian demonstrate all the skills required to make this lovely treat.

Our class will take around 2 hours as we bake our masterpieces, before you can tuck into the fruits of your labour all whilst hearing fantastic memories and stories and tips throughout from Ian.Tickets are priced at £35 for individuals and £50 for groups of two or more that will join from the same household. Places are non-refundable and cannot be cancelled or altered after purchase. All guests will be emailed a link to the class following their booking.


20 x 20 tray or equivalent

Kitchen Aid or equivalent with paddle attachment or mixing bowl and wooden spoon

Rolling pin

Baking parchment

Fork for spiking the shortbread

Small pan


Electric whisk


Pastry brush

Kitchen Aid or equivalent with whisk attachment (ideally or electric hand whisk)

Digital thermometer

Piping bag & star nozzle (Optional. Otherwise you can use a normal fork.)

Blow torch (Optional)


Shortbreads 140g unsalted butter at room temperature 70g caster sugar 1/4tsp salt 140g plain flour 70g rice flour* 1 tsp vanilla *If you haven’t got any rice flour then use 210g plain flour Lemon layer 200ml double cream 200ml lemon juice & zest - about 4 or 5 lemons 3 large eggs 2 large egg yolks (save the whites for the meringue) 250g caster sugar 10g cornflour Italian meringue 2 large egg whites 100g caster sugar 10g golden syrup (or corn syrup) 25g water
