About the Event

Join the brilliant Ian Cumming (GBBO, series 6) live from Cambridge who will teach you the tricky art of baking a Charlotte Royal. Ian's recipe is a swiss roll creation filled with delicious raspberry cream and bavarois, creating the perfect layers within the sponge.

We’ll start off the class with an introductory welcome and some background from Ian's time on TV, before we ask you to put on your aprons and bake along as you watch Ian demonstrate all the skills required to make this lovely treat. Our class will take around 2 hours as we bake our masterpieces, before you can tuck into the fruits of your labour all whilst hearing fantastic memories and stories and tips throughout from Ian.

Tickets are priced at £35 for individuals and £50 for groups of two or more that will join from the same household. Places are non-refundable and cannot be cancelled or altered after purchase. All guests will be emailed a link to the class following their booking.

Baking trays. (Ian uses a 9x13 inch and a 9x11 inch and a 7 inch round tin).


Swiss Roll

5 large eggs (extra large in the US) 

160g caster sugar 

Vanilla extract 

Pinch of salt 

160g plain flour 

Cake release spray or veg oil

Raspberry Jam

200g raspberries (fresh or frozen) 

130g caster sugar 

2tsp lemon juice

Bavarois Cream

6 sheets of gelatine or 2 Tbsp powdered gelatine** 

10 large egg yolks (extra large in the US) 

200g caster sugar 

Pinch of salt 

300ml of milk 

500ml double (heavy) cream 

150g raspberries 

50g caster sugar 

1tsp lemon juice

75g of fresh raspberries (keep them chilled in the fridge) 

60ml lemon juice (approx 2 lemons) 

1/2 to 1 tsp lemon oil*** 

50g caster sugar
