About the Event

Join the brilliant Ian Cumming (GBBO, series 6) live from Cambridge who will teach you his fun Burger Cakes. In this class you’ll bake not only some top-notch brownies but also a vanilla chiffon sponge - which we’ll cool upside down to give us the maximum rise! To complete the look we’ll make some panna cotta ‘cheese slices’ and some delicious thick raspberry custard / ketchup.

We’ll start off the class with an introductory welcome and some background from Ian's time on TV, before we ask you to put on your aprons and bake along as you watch Ian demonstrate all the skills required to make this lovely treat. 

Our class will take around 2 hours as we bake our masterpieces, before you can tuck into the fruits of your labour all whilst hearing fantastic memories and stories and tips throughout from Ian.Tickets are priced at £35 for individuals and £50 for groups of two or more that will join from the same household. Places are non-refundable and cannot be cancelled or altered after purchase.


Mixing Bowls

Medium and Small Saucepans

Baking Parchment

6 Pastry Rings, 100mm wide and at least 27mm high (4 inches wide and  1 inch high)

9x13inch Baking Tray + 8x12inch Baking Tray

Electric Whisk - ideally a Kitchen Aid 

Electric Hand Whisk too - but don’t worry if you only have one


Cake Release Spray or Veg Oil

Cookie cutter approx. 80mm wide (about 3 inches) 

6 small magnets - no really! Small neodymium magnets are available from Amazon. (Optional but fun!) 

Large baking tray big enough to comfortably fit 6 pastry rings on. If using magnets then it will need to be steel.


For the Brownie Burger:

185g (13 Tbsp) Unsalted Butter

185g (approx. 1 cup) Dark Chocolate, chopped into small pieces 

3 Large Eggs*

260g (1 ¼ cups) Caster Sugar 

Generous pinch of Salt

85g (2/3 cup) Plain Flour** 

40g (¼ cup)Cocoa

50g (¼ cup) White Chocolate, chopped small 

50g (¼ cup) Milk Chocolate, chopped small

For the Cheese Slices:

2 Leaves of Gelatine***

50g (¼ cup) Double Cream 

100g (1/3 cup + 2 Tbsp) Milk

20g (1 Tbsp + 2 tsp) Caster Sugar 

1tsp Vanilla Extract / Essence

Yellow Food Dye

For the Burger Bun:

3 Large Eggs*

150g (¾ cups) Caster Sugar 

Good pinch of Salt

90g (1/3 cup) Water 

1.5tsp Vanilla Extract / Essence

150g (1 cup) Self-Raising Flour 

Sprinkling of Sesame Seeds

60g (¼ cup) Flavourless Oil (Veg / Canola Oil)

For the Ketchup

100g (¾ cup to 1 cup) raspberries (frozen are fine but defrost before class) 

1tsp Lemon Juice

20g (1 Tbsp + 2 tsp) Caster Sugar 

2 Large Egg Yolks*

30g (2 Tbsp) Double Cream 

Red Food Dye

*UK Large Egg = US Extra-Large Egg

**If using cups, gently spoon flour into the measuring cup. Do not pack flour in.

***I strongly recommend buying Dr. Oetker leaf gelatine
