Join the brilliant Ian Cumming (GBBO, series 6) live from Cambridge who will teach you to make the beautiful Apple & Tarragon and Pecan & Caramel Cheesecakes
We’ll start off the class with an introductory welcome and some background from Ian's time on TV, before we ask you to put on your aprons and bake along as you watch Ian demonstrate all the skills required to make this lovely treat on Saturday 16th July at 5pm UK time.
Our class will take around 2 hours as we bake our masterpieces before you can tuck into the fruits of your labour all whilst hearing fantastic memories and stories and tips throughout from Ian. Tickets are priced at £35 for individuals and £50 for groups of two or more that will join from the same household. Places are non-refundable and cannot be cancelled or altered after purchase.

Ingredients:
For the bases:
120g (8 ½ tbsp.) unsalted butter
60g (⅓ cup) caster sugar
120g plain flour (1 cup, sifted then measured)
¼ tsp salt
60g (½ cup) ground rice*
1/2 to 1 tsp vanilla extract / essence
Oil or release spray
*If you can’t get hold of ground rice just use an extra 60g (½ cup) of plain flour.
For the Caramel Sauce:
60g (4 tbsp) unsalted butter
100g (just under ½ cup) double cream
50g (¼ cup) dark brown soft sugar
salt to taste
vanilla to taste
For the Cheesecake:
400g (1 ¾ cups) cream cheese*
80g (⅓ cup + 2 tbsp) caster sugar
2.5tsp cornflour
1 large egg
2 large egg yolks
For the Apple & Tarragon Cheesecake:
2 Braeburn apples
280g (half) of above cheesecake mix
100g (just under ½ cup) double cream
30g (2 ½ tbsp) caster sugar
1tbsp chopped fresh tarragon
pinch of salt
1tsp lemon juice
6 tarragon leaves
For the Pecan & Caramel Cheesecake:
50g (½ cup) pecans
280g (half) of above cheesecake mix
50g (¼ cup) double cream
100g (approx. ⅓ cup) caramel sauce
