Join Howard Middleton (GBBO, series 4) live from Sheffield who will teach you the skills you need to master his delicious Swedish Spiced Buns.

This class takes place on Saturday 6th January 2024  at the following times:

9am PT / 11am CT / 12pm ET / 5pm UK GMT

Fill your kitchen with the tempting aroma of these spiced, sweet Swedish buns - perfect for an indulgent breakfast or with coffee anytime! Howard's take on solbullar (or sun buns) fills soft saffron-scented dough with tangy blueberry jam and creamy vanilla custard, whilst his västgotäwienerbröd is a tongue-twisting braid of cardamom and orange that thinks it's a Danish pastry.

Bake With A Legend Online Classes are an interactive experience, where we limit group sizes to around 25 to ensure an intimate online setting. Not only do you have your celebrity baker teaching you, but you also have one of our brilliant Bake With A Legend hosts who will ensure the smooth running of your experience ensuring everyone is enjoying themselves.

If you need any help at any point during the class, you’ll be encouraged to raise your hand and your baker will be virtually joining you in your own kitchen in no time to assist you!

You’ll bake along in tandem with Howard, learning many tips and tricks a long the way as you perfect all the skills required to make Howard's sumptious Swedish Buns. Howard will also be on hand to answer your questions, be those about baking or his experiences of being involved on such an iconic television show.

Tickets are priced at £35 for individuals and £50 for groups of two or more that will join from the same screen. Please note we can accept requests to move classes with two or more weeks notice prior to the class – any requests to do so, will incur a £5 administrative charge.

Once booked in, all guests will be emailed a full recipe and the zoom link required to join us for the class. Just in case you don’t spot it please check junk mail!

For the Solbullar custard filling:

250ml (1 cup) milk 

3 large (XL in US) egg yolks

½ tsp vanilla extract or vanilla bean paste 

30g (2 ½ tbsp) caster sugar

20g (2 ½ tbsp) cornflour/corn starch

For the Solbullar blueberry jam:

About 200g (~1 ⅓ cups) fresh blueberries (or use raspberries, blackberries or strawberries)

100g (1 cup) jam sugar (or you can use ordinary sugar and a squeeze of lemon juice)

For the solbullar saffron dough:

150ml (⅔ cup) milk and a few strands of saffron*  

2 tsp fast action/quick yeast

400g (3 cups) strong white bread flour (plus extra for shaping)

Generous pinch of salt 

50g (¼ cup) caster/superfine sugar

75g (5 tbsp) unsalted butter 

1 large egg, beaten

*Ideally leave the saffron soaking in the milk overnight, so that it imparts a stronger flavour and colour

For the Västgötawienerbröd cardamom dough:

400g (3 cups) strong white bread flour (plus extra for shaping)

2 tsp fast action/quick yeast 

Generous pinch of salt

Cardamom to taste (I go for the crushed seeds of about 8 pods) or ¼ tsp

50g (¼ cup) caster/superfine sugar 

150ml (⅔ cup) milk

75g (5 tbsp) unsalted butter 

1 large (XL in US) egg, beaten

For the Västgötawienerbröd filling and topping:

100g (7 tbsp) soft, unsalted butter 

50g (¼ cup) soft, light brown sugar

Grated zest of 1 orange 

Beaten egg for glazing

1 tbsp pearl sugar or similar
