About the Event
Join Howard Middleton (GBBO contestant from series 4) live from Sheffield who will teach you the skills you need to bake his delicious Stollen and Lebkuchen.
These treats are perfect for gifts (or a little self-indulgence). Howard is serving up two classic German festive bakes - deliciously fruity mini stollen with a rich almondy core and pretty little spiced and iced lebkuchen.
This class takes place on Sunday 10th December at the following times:

Bake With A Legend Online Classes are an interactive experience, where we limit group sizes to around 25 to ensure an intimate online setting. Not only do you have your celebrity baker teaching you, but you also have one of our brilliant Bake With A Legend hosts who will ensure the smooth running of your experience ensuring everyone is enjoying themselves.
If you need any help at any point during the class, you’ll be encouraged to raise your hand and your baker will be virtually joining you in your own kitchen in no time to assist you!
You’ll bake along in tandem with Howard, learning many tips and tricks a long the way as you perfect all the skills required to make Howard's delicious take on the classic Christmas bakes. Howard will also be on hand to answer your questions, be those about baking or his experiences of being involved on such an iconic television show.
Tickets are priced at £35 for individuals and £50 for groups of two or more that will join from the same screen. Please note we can accept requests to move classes with two or more weeks notice prior to the class – any requests to do so, will incur a £5 administrative charge.
Once booked in, all guests will be emailed a full recipe and the zoom link required to join us for the class. Just in case you don’t spot it please check junk mail!
Large Flat Baking Sheets or Trays
Dough Scraper / Bench Scraper
For the Stollen Dough:
50g (1/4 Cup) Glace Cherries (diff of colours)
3 tbsp Brandy, Kirsch or Orange Juice
3 tsp Fast Action / Quick Yeast
60ml (1/4 Cup) Warm Water
75ml (1/3 Cup) Milk, plus extra for sealing rolls
10g (1/2 tbsp) Golden / Maple Syrup or Honey
20g (1tbsp + 2tsp) Caster/superfine Sugar
50g (1/4 Cup) White Chocolate, chopped***
Pinch of Salt ½ tsp
Mixed Spice (Cardamom, Cinnamon, Nutmeg)
Grated Zest of 1 Lemon
1 Large Egg, beaten
100g (approx. ½ Cup) Dried Fruit, such as Raisins, Sultanas, Dried Apple, Apricots, Cranberries or Sour Cherries
325g (2 ½ Cups) Strong White Bread Flour
For the Marzipan Filling:
100g (3/4 Cups + 2tbsp) Icing/Powdered Sugar
100g (1 Cup) Ground Almonds/Almond Flour
½ Large Egg, beaten
A few drops of Almond Extract
15g (2tbsp) Flaked Almonds
For the Lebkuchen:
125g (1 Cup) Plain/All-Purpose Flour, plus extra for rolling
50g (1/2 Cup) Ground Almonds/Almond Flour
½ tsp Baking Powder
¼ tsp Bicarbonate Soda
1tsp finely grated Orange Zest
100g (5tbsp) Runny Honey
40g (5 ¾ tbsp) Unsalted Butter
Generous pinches of: Ground Cloves, Cinnamon, Black Pepper and ground ginger
For the Icing:
50g (1/2 Cup) Icing/Powdered Sugar
1tsp Orange Juice
*If using cups, gently spoon flour into measuring cup. Do not pack in.
**1 Large Egg in UK = XL in US
***The white chocolate enriches the dough, similar to butter, but it doesn’t have a strong flavour, so you shouldn’t notice it even if you’re not a white chocolate fan.
