Join Howard Middleton (GBBO contestant from series 4) live from Sheffield who will teach you the skills you need to bake his delicious After Dinner Chocolate Petit Fours, as week 3 of our 10-week Series 4 Bake Along.

This class takes place on Sunday 19th March 2023 at the following times:

10am PT / 12pm CT / 1pm ET / 5pm UK GMT

Howard goes back to the 1960s for his retro take on petits fours inspired by classic British after dinner chocolates. Try your hand at some chocolate tempering to create delicious treats with the perfect snap!

This class is part of our Series 4 Bake Along, where we revisit Bake Off's UK Series 4 and try our hand at one bake from each week in the tent. We'll cover signatures, technicals and even show-stoppers. For significant savings and to sign up to all 10 weeks, click here.

Bake With A Legend Online Classes are an interactive experience, where we limit group sizes to around 25 to ensure an intimate online setting. Not only do you have your celebrity baker teaching you, but you also have one of our brilliant Bake With A Legend hosts who will ensure the smooth running of your experience ensuring everyone is enjoying themselves.

If you need any help at any point during the class, you’ll be encouraged to raise your hand and your baker will be virtually joining you in your own kitchen in no time to assist you!

You’ll bake along in tandem with Howard, learning many tips and tricks a long the way as you perfect all the skills required to make Howard's chocolate petit four duo. Howard will also be on hand to answer your questions, be those about baking or his experiences of being involved on such an iconic television show.

Tickets are priced at £35 for individuals and £50 for groups of two or more that will join from the same screen. Please note we can accept requests to move classes with two or more weeks notice prior to the class – any requests to do so, will incur a £5 administrative charge.

Once booked in, all guests will be emailed a full recipe and the zoom link required to join us for the class. Just in case you don’t spot it please check junk mail!

Equipment

Saucepan and heatproof bowl or bain marie  

Rolling pin

Large flat baking sheets or baking trays  

Baking parchment

Electric hand mixer or stand mixer with whisk attachment  

Sharp knife

4cm/1½in square cookie cutter (optional)   

Wire cooling rack

Swiss roll tin (about 32cm x 23cm / 12½in x 9in)  

Piping bags

Cook’s thermometer* 

Sheets of acetate or kitchen foil  

Mixing bowls

Small artist’s brush Spatula

* A reliable thermometer is essential for tempering chocolate. You can use a traditional jam/candy thermometer, a spatula with an integrated thermometer or an infrared thermometer.

Ingredients 

For the tempered chocolate squares and matchsticks:

180g ( ~ 1 cup) good quality dark chocolate, about 70% cocoa content

Fresh orange zest or orange extract (optional) 

About 2 tsp granulated sugar (optional)

Gold leaf or edible glitter

For the chocolate cakes:

25g (2 tbsp) dark brown sugar and 60g (¼ cup + tbsp) caster/superfine sugar, mixed together

3 large eggs (XL in US), separated 

25g (3 tbsp + 1 tsp) plain/all-purpose flour

15g (2 tbsp) ground almonds/almond flour 

10g (1 tbsp) cocoa powder

½ tsp baking powder 

A splash of milk

For the chocolate ganache filling:

100ml ( ¼ cup + 3 tbsp) double/heavy cream 

100g (~ 2/3 cup) dark chocolate, finely chopped

For the mint mascarpone cream:

150ml (2/3 cup) double/heavy cream 

75g (1/3 cup) mascarpone

50g (¼ cup + 3 tbsp) icing/powdered sugar 

A few drops of mint green food colouring

1 or 2 drops of natural peppermint extract or crème de menthe liqueur to taste**

** If you prefer, you can flavour the cream with orange or coffee instead and change the colouring accordingly.
