Our new extended 'Showstopper Classes' gives you the chance to bake an eyecatching masterpieces together during a four hour session.

Join the brilliant Dan Beasley Harling (GBBO, series 9) live from London in this extended class, learning how to create the spectacular Gâteau St Honoré. Named after the patron saint of bakers, the Gâteau St Honoré requires mastery of many different pastry skills, including lamination, choux, creme chiboust, and of course the dreaded caramel.

This truly show-stopping pastry is often given as a ‘final exam’ for aspiring pastry chefs at the end of their training, and it’s not hard to see why! But never fear, Dan is ready to walk you through its creation, step by step.

Equipment:

Digital scales

Mixing bowls x 6

Baking sheet x 2

Baking parchment

Bench scraper

Rolling pin

Cling film

Saucepan x 4

Stand mixer or electric whisk (ideally both!)

Piping bags x 4

10mm round tip

Large French star tip

Wire rack

50mm semi-sphere silicone moulds (optional)

Small french star tip (optional)

St Honore tip (optional)

Craquelin:

40g unsalted butter, soft

40g soft light brown sugar

40g plain flour

Rough Puff Pastry:

125g plain flour, plus extra for dusting

1/2 tsp caster sugar

1/2 tsp salt

125g cold butter

60g cold water

1/2 tsp distilled white vinegar

Choux Pastry:

60g water

60g milk

60g unsalted butter

1/2 tsp salt flakes

1/2 tsp caster sugar

70g strong white bread flour

120g whole eggs *(2 large eggs, weighing ~138g in their shells)

Creme Chiboust:

1 tsp gelatine

400ml whole milk

1 vanilla pod

4 egg yolks

80g caster sugar

40g cornflour

4 egg whites

80g caster sugar

Caramel:

300g caster sugar

a squeeze of lemon juice (optional)

Creme Chantilly:

250 g double cream

25g icing sugar

The class starts at 4pm UK on Saturday 22nd May and all you need is access to Zoom via a computer, an iPad or a phone and you'll be connected! The length of this class is four hours, including a break midway for refreshment. Tickets are priced at £50 for individuals and £70 for groups of two or more that will join from the same household. Places are non-refundable and cannot be cancelled or altered after purchase.

Upon booking, all guests will be emailed a booking confirmation, followed by the full recipe and joining details a week ahead of the class. Please do check junk email just in case you don't spot it arrive!
