Dan's Berry Roulade

Join the brilliant Dan Beasley Harling (GBBO, series 9) live from London who will teach you the skills you need to bake his tasty Berry Roulade. A meringue roulade is a great way to impress your guests, and more simple that you may think when you know all the tricks! This berry version is made with seasonal fruits, and flavored with a tangy homemade lemon curd.

We’ll start off the class with an introductory welcome and some background from Dan's time on TV, before we ask you to put on your aprons & bake along as you watch Dan demonstrate all the skills required to make this favourite treat. Our class will take around 2 hours as we bake our masterpieces, before you can tuck into the fruits of your labour all whilst hearing fantastic memories and stories from Dan.

Tickets are priced at £35 for individuals and £50 for groups of two or more that will join from the same household. Places are non-refundable and cannot be cancelled or altered after purchase. All guests will be emailed a link to the class on the Monday prior.

Swiss roll tin, or 9”x13” traybake tin

Medium saucepan 

Heatproof bowl x 2 

Fine Mesh sieve

Fine zester (and strip zester, optionally) 

Lemon juicer 

Ingredients: 

Meringue: 

a little oil 

4 large egg whites* 

250g caster/superfine sugar 

1 tsp cornflour/corn starch 

1 tsp white wine vinegar 

1 tsp vanilla extract 

Lemon curd: 

4 large egg yolks* 

2 lemons, zest and juice 

100g Caster Sugar 

50g Butter 

Filling: 

150ml double/heavy cream 

250g mascarpone 

The prepared lemon curd 

~100g summer berries 

Decoration: 

~100g summer
